Smoked Peach Crumble:
For the peaches:
1. 6 large peaches
2. ¼ cup granulated sugar
3. juice of ½ lemon
4. ½ Tsp Cinnamon
5. ½ tsp ground ginger
6. Pinch of kosher salt
For the topping:
1. 1 ½ cup of All-purpose flour
2. 1 Cup of Brown sugar
3. ½ tsp kosher salt
4. 4. ¼ tsp ground cinnamon
5. ½ cup (1 stick) melted butter
Vanilla Ice cream for serving
Preheat the smoker to 375. Cut peaches up (skin on), and mix peaches, sugar, lemon juice, cinnamon, ginger and salt in a bowl
Make topping by combining flour, brown sugar, salt & cinnamon. Pour in melted butter and stir until mixture resembles crumbs.
Pour peaches and juices into a baking dish or skillet. Sprinkle crumb topping evenly over peaches.
Bake until the topping is golden brown, and peaches are bubbling. Approximately 45-50 minutes. Serve warm and ice cream over it.
