Ingredients
2 ½ pounds Beef Stew Meat “Cubed” I” X 1”
1 large Yellow Onion Rough chop
6 gloves of garlic (chopped)
3 large russet potatoes peeled and cubed 1”X1”
2 Stalks of Celery “Chopped”
2 carrots chopped
1 Bell Pepper (Julienne)
1 can peeled whole stewed tomato “quartered”
1 can Crushed tomato
3 Jalapenos with Seeds chopped
6 oz can of tomato paste
1 32 oz of V8 Juice Spicy if they have it
I bag of frozen raw okra “cut”
2 cups of small elbow macaroni
3 fresh basil chopped
½ TBS of Garlic Powder
1 ½ TBS kosher Salt
1TBS Black Pepper Course Ground
Directions
In a large 8 quart pan, sear up beef with olive oil.
once meat starts to brown add onions garlic, jalapeno, and bell pepper
and keep mixing until onions start to become soft. Add can of tomato paste and mix thoroughly
Cover with water about 2inches above food on medium heat. Add Salt and Pepper
add can of crushed tomato, Add potato, celery, carrots, and stewed tomato. Cover and let simmer
once potatoes are close to being finished add the 3 cups of the V8 juice and bring back to a simmer.
Add elbow macaroni and okra and Fresh Basil. Mix every 6-8 minutes to make sure macaroni does not stick to bottom
Salt to taste.
Feel free to make it your own and add other vegetables of your choice
Total cook time 1.5- 2 hours
